Yes, we observe adaptations.
And within the framework of neo-Darwinism, this is the most coherent extrapolation.
But, we have never observed the gradual emergence of a new body plan.
And saying "it takes millions of years" is not an observation, it is a supposition consistent with the neo-Darwinian model.
And saying "you are just creationists" is an evasion that ignores the fundamental question. Regardless of whether the critique is raised by a creationist, a skeptical biologist, or a philosopher of science, the question remains the same: is the extrapolation a proof or a coherent supposition?
